Famous Rice appalam or Arisi appalam from Kallidaikurichi
There was a time when people used to make appalams and vadams for the entire year during the hot scorching summer. From dictating the recipe to protecting the dried appalams from crows, everybody in the family had a duty in the process. And then came the era of buying authentic appalams and vadams from places like KallidaiKurichi where it is prepared in the traditional manner without any preservatives.
A must for every meal
Kallidaikurichi in southern Tamilnadu is known for its extensive range of homemade traditional appalams. Mylapore Ganapathy’s has sourced rice appalams exclusively from the home of appalams. It makes a great accompaniment for every south Indian rice variety such as the Puliyodarai and Sambar rice. It tastes great even by itself as a tea time snack when sprinkled with a little chilli/chaat powder.
Process involved
Rice appalams are traditionally prepared with raw dough made of rice flour, sago (javarisi) and green chillies. The smooth dough is then divided into small balls and steam cooked. The cooked dough is now rolled out into tiny, translucent discs and dried. The dried appalams can be stored in an airtight container for up to a year.
Watching Arisi appalam fluff up into crispy white discs in the hot oil is a visual treat. The taste and aroma of these appalams is sure to make even the most ordinary meals a flavourful affair.
